Turmeric Scrambled Tofu

Method

Crumble tofu & add tamari with ume vinegar with turmeric, leave in fridge.

Heat oil in frying pan.  Add mushrooms & sautĂ© for 1 min.  

Add mirin & spring onions. Add tofu & stir well. Cook for 3 mins.  Stir.

Serve with garnish of parsley & sour dough toast.
