Turmeric Scrambled Tofu
- 1/2 block silken Tofu
- 1/2 block firm Tofu
- 1 cup thinly sliced mushrooms
- 1/4 cup spring onions
- 1 tbsp mirin
- 1 tbsp umeboshi vinegar
- 1/2 tbsp turmeric
- 1 tbsp tamari
- 1 tbsp finely chopped parsley to garnish
- Wholemeal sough dough.
Crumble tofu & add tamari with ume vinegar with turmeric, leave in fridge.
Heat oil in frying pan. Add mushrooms & sauté for 1 min.
Add mirin & spring onions. Add tofu & stir well. Cook for 3 mins. Stir.
Serve with garnish of parsley & sour dough toast.
