This is not only quick to make but fantastic for the kidneys. Great to have before bed time to allow the kidney's to relax. Also provides the blood with a good dose of minerals.
- 1 wakame strip
- 3 shitake mushrooms
- dash tamari
- fresh chopped ginger
- diced shallots
- coriander or bok choy to garnish
- Soba (buckwheat noodles) or udon noodles (wheat noodles). Cook in salted water for 3 minutes. Run cold water through & pop in fridge until needed.
- During summer a little squeeze of lemon juice is very cooling for the body.
Simmer wakame & mushrooms in a small saucepan of water & simmer for 5 minutes. Reduce heat & cook for a further 15 minutes. Add a good dash of tamari, ginger & shallots.
Serve with noodles.
Garnish with bok choy or chopped coriander.
