Cookies
Great for lunch boxes & afternoon tea for the children.
Ingredients
- 1 1/5 cups plain organic flour
- 1/2 cup almond meal
- 2 tbsp corn oil
- 1/5 cup desiccated coconut
- 1 cup dried fruit
- 2 drops vanilla essence
- warm water
- pinch sea salt
- Cocoa powder (optional) for chocolate cookies
Play with this base of a mixture & you can keep adding. Maybe lemon & orange rind, some cinnamon, nutmeg, hazelnut meal instead of almond meal etc…
Method
Pre heat oven to 180.
Sift flour & salt. Add vanilla, coconut & dried fruit & mix through roughly with your hands. Slowly add water until dough forms.
Divide into cookie size dough & mould into shape.
Place onto lined baking tray & cook for 15 to 20 mins.
